The map doesn't change after the ending, you can still roam independently on what you choose. However the main menu background will change. I'm not sure, i have never finished any of my FC5 playthroughs, i just can't get myself to get to the last mission of confronting Joseph, just to see that disappointing ending.

All three endings of Far Cry 4 were well-done, though. That's the difference. There was a buildup, there was a payoff, and the player had a choice, even if they all lead to some grey areas.
